"default" is for updating with a version series e.g. 4.4.1 to 4.4.2 etc. "JoomlaNext" is for updating between major versions e.g. 3.10 to 4 or 4. to 5.
In the Joomla update, it seems there are two options to set. The update change e.g. Default or JoomlaNext, and "minimum stability e.g. alpha, beta, RC, stable (etc). Is that what you're referring to, and yet it's giving you notification of updates to Release Candidates?
What Joomla version are you using - 5.1.0 is the latest. On joomla.org under developer network / nightly builds the only version there is J5.2-alpha1. 5.2RC is not scheduled for release until at least October 2024 (refer to: https://developer.joomla.org/roadmap.html). What RC release are you seeing as "available"?
